A Forever Friendship (aka Chelsea + Ruth in Madrid)

If you would have told these two girls back in fourth grade that someday, when they were old and grown up and graduated from college, they would meet up to travel in Spain together, you probably would have blown their little minds.

 

Wait….who am I kidding?? They would have looked you straight in the eye, raised one eyebrow each, and said, “Ummm…duh! OF COURSE we’ll travel to Spain together! We’re going to have tons of awesome adventures and be bestest best friends forever!”

While a move to Nebraska, jr. high, high school, and college got in the way of our best laid plans, some friendships truly stand the test of time.

For the past year, Ruth has been studying for her masters degree in Foreign Diplomacy at the Escuela Diplomática de Madrid (amazing right?). So when work sent Chris to Portugal for a week, I hopped a plane for Spain!

Madrid was fantastic.

The palaces. The art. The old buildings. The food. The balconies on every window. The history. The colors. The dulce de leche pastries. The tapas. The cathedrals. The friendly people. The cured pigs legs hanging in shop windows. The parks. The churros and chocolate. The croquettes.  The winding cobblestone streets. The jamon iberico with bread and cheese.  And those crazy, inbred Habsburg kings.

Love.

Side note: It was freakin’ blazing hot. I got quite dehydrated despite drinking liters and liters of water and couldn’t pee for the first 3 days (TMI?). I’ve gone soft living in Norway!

Ruth kept teasing me for always taking pictures of the food we ate. Food is fascinating to me. You get such a sense of culture from food. I wanted to remember all of it. Plus….it’s beautiful!

Getting to see Ruth again was magical. We’ve kept in touch on and off over the years, but we were able to pick up right away where we left off and start making treasured memories afresh. She has grown into such a beautiful, smart and amazing woman! What a special experience it was to have an opportunity like this to reconnect with her. It felt just like we were kids again, but each with an amazing life and journey behind us to share :)  Back in 4th grade we promised we would be bestest best friends forever no matter what, and now we can affirm we truly will be! Thank you for a wonderful week Ruth! Sending you lots of love until our next big adventure!

Life Lately

This post is inspired by a blog I stalk follow called The Rockstar Diaries. (I know a lot of you guys read it too :) It’s way inspiring!) The girl who writes it does this thing where when she’s too busy to write up a full post, she’ll just post a bunch of photos she and her husband have taken on Instagram recently to keep up to date. Since I happen to be too busy to write up a full post at the moment and since I happen to take a lot of photos with Instagram, I decided to try out her idea on our blog!

So here you are… our life lately according to Instagram:

1 & 2.  Souvenirs from my trip to Madrid and Chris’ trip to Portugal

3 & 4. Repotting my inherited houseplants with Jamie before she moved and lemons for homemade lemonade. (If you follow the link to the recipe…take it from me and double the sugar.)

5 & 6. Is it time to start packing yet?? And a stay-at-home “campfire” mallow roast with Josh and Kolie.

7 & 8. Teaching the Young Women at church how to make purse cakes and one of the latest batches of cupcakes from the Chelsea’s Cool Cakes front.

9 & 10. A Chelsea-makes-dinner night and a Chris-makes-dinner night. Naan pizza with chicken, asparagus and caramelized onion and hot wings with Kool-aid :)

11 & 12. Date night Saturday with computer games and real pizzeria pizza! (Rather than the typical frozen pizza. Splurge!) and does anyone know what kind of crazy vegetable this is??
